Beef Fajitas

Ingredients

  • 1 pound lean, boneless sirloin or possibly tenderloin steak
  • 2 med. tomatoes, sliced in wedges
  • 1 lg. yellow pepper
  • 1 lg. green pepper
  • 1 lg. red pepper
  • 1 lg. onion, sliced
  • 1 teaspoon oregano
  • 1/4 teaspoon garlic pwdr
  • 1/2 teaspoon chili pwdr
  • 1 teaspoon oil
  • 1 pkg. flour tortillas (10)
  • Orange juice, as needed

Directions

  1. Marinate steak strips in orange juice 3 to 4 hrs before cooking.
  2. Trim all visible fat from meat. Slice steak into 1/8 inch strips. Cut 3 peppers into strips. Heat oil in warm skillet or possibly electric wok till warm. Stir-fry beef strips till nearly done - about 2 to 4 min.
  3. Remove beef and keep hot in another dish, covered. Stir-fry onions first, till crisp tender; then add in all three peppers and spices and stir-fry till barely tender. Add in orange juice to wok during vegetable cooking if more liquid is needed.
  4. Add in beef and tomatoes and heat thoroughly. Serve with flour tortillas, salsa and lowfat yogurt or possibly light lowfat sour cream. Makes 10 fajitas. Each fajita is 170 calories and 4.5 grams fat.
