Ingredients

  • 1 lb grnd beef
  • 2 c. sweet red peppers, packed in oil
  • 1 lrg onion, minced
  • 1 x (4 oz) can mushrooms or possibly fresh mushrooms
  • 1 c. shredded sharp cheddar cheese
  • 1 x recipe double pie crust

Directions

  1. Method:1. Place peppers, including liquid, into food processor; pulse till peppers are cut into small pcs.
  2. Brown meat and onions. Add in peppers, mushrooms, and cheese to meat mix. Spoon into bottom crust. Cover with top crust, and seal the edges.
  3. Bake at 350 degrees F (175 degrees C) till crust is brown, and pie is heated through.
  4. Makes 1 pie
  5. A delicious blend of beef, Italian peppers, and cheese. Make ahead for busy days. It reheats wonderfully in the microwave.
