Beef And Lotus Root Soup (Canh Bo Sen) Recipe

Ingredients

  • 6 c. Beef Stock (see recipe)
  • 1 lb fresh lotus root peeled, and cut into thin rounds Coarse sea salt to taste Freshly-grnd white pepper to taste
  • 1 c. shredded cooked oxtail meat (from making the beef stock)
  • 1/4 c. julienned holy basil leaves

Directions

  1. Pour the Beef Stock into a pot and bring to a gentle boil over medium heat. Reduce the heat to medium-low and add in the lotus root. Season to taste with salt and pepper and simmer, partially covered, till the lotus root is tender, about 35 min.
  2. Add in shredded meat and simmer till it is heated through, about 10 min more. Serve warm in a communal bowl or possibly individual soup bowls - garnish with holy basil.
  3. This recipe yields 4 to 6 servings.
