Ingredients

  • 6 teaspoon unsalted butter
  • 6 teaspoon flour
  • 1 quart. (4 c.) lowfat milk
  • 1 onion
  • 1 teaspoon salt

Directions

  1. Scald 1 quart. lowfat milk while being careful not to curdle.
  2. In a saucepan, heat butter, add in flour, combine well and whisk till golden. Gradually stir in the scalded lowfat milk, then add in the onion. Cook over low heat for about an hour, stirring occasionally.
  3. Strain through cheesecloth.
