  1. Combine first 3 ingredients. Cover and refrigerateat least 8 hrs. Cook rice omitting salt. Rinse with cool water; drain. Combine rice and 1/4 c. salad dressing, stirring well. Refrigerateat least 8 hrs. Spoon rice into individual lettuce lined plates. Spoon bean mix over rice. Top with cheese, green onions, tomatoes and if you like, lowfat sour cream.
