- 2 tbsp. salsa
- 2 tbsp. nonfat yogurt
- 1 tbsp. chopped sweet red pepper
- 1 tbsp. chopped onion
- 1 tbsp. shredded lettuce
- 1 tbsp. chopped fresh coriander
Directions
- Serve the beans and rice topped with the cheddar, salsa, yogurt, red peppers, onions, lettuce and coriander.
