Ingredients
- 1/4 c. vegetable oil
- 1/3 c. minced green pepper
- 1/3 c. minced onions
- 2 (16 ounce.) cans pork and beans
- 4-6 sliced frankfurters
- 1/4 c. barbecue sauce
- 1 1/4 c. cornmeal
- 1/4 c. all-purpose flour
- 1/4 teaspoon salt
- 1 c. lowfat milk
- 1 slightly beaten egg
Directions
- Heat oven to 350 degrees. Heat 1 Tbsp. oil in a large skillet. Saute/fry peppers and onion till tender. Add in beans, franks and barbecue sauce. Cook uncovered for 5 min, heated through. Spread into a 7x11 inch greased glass baking dish.
- For topping, combine all remaining ingredients with the remaining 3 Tbsp. oil; pour over top of bean mix and bake uncovered for 30 min or possibly till an inserted toothpick comes out clean. Let stand 5 min before serving. Makes 6-8 servings.
