Bean Curd Stuffed Tomato (Ca Chua Don Dau Hu) Recipe

Ingredients

  • 4 med tomatoes
  • 1 sqr bean curd mashed to a paste
  • 1/4 c. straw mushrooms
  • 2 Tbsp. cellophane noodles soaked in hot water for 20 min, liquid removed, finely minced White part of 1/2 leek minced Freshly-grnd white pepper to taste
  • 1/2 tsp salt
  • 1/4 tsp granulated sugar
  • 2 Tbsp. vegetable oil

Directions

  1. Remove and throw away the tops and pulp of the tomatoes. Combine the remaining ingredients, except for the oil, and stuff into tomatoes.
  2. Heat the oil in a frying pan over a high flame. Put the tomatoes in the pan, stuffed-side down, then turn the heat down to medium and cover. Fry till brown, about 3 min more. Remove from heat.
  3. Serve with either Buddhist Nuoc Leo (see recipe) or possibly thin soy sauce.
  4. This recipe yields 4 servings.
