Basque Saffron Rice Recipe

Ingredients

  • 1 tsp extra virgin olive oil
  • 1/4 c. sliced yellow onion
  • 1/2 c. long-grain white rice
  • 1 c. nonfat low-salt chicken broth
  • 1/8 tsp saffron threads salt and pepper

Directions

  1. Heat oven to 350. Using an oven-proof casserole which also can be used on a burner, heat oil over medium-high heat. Add in onion and rice.
  2. Saute/fry 5 min. Add in chicken broth and saffron. Bring to a boil, cover and place in the oven for 15 min.
  3. Remove from the oven and add in salt and pepper to taste. _____________________
  4. Cuisine: "Basque"
  5. Yield: 1 c.
  6. NOTES : Pilaf, sometimes called pilau, is a rice dish which begins with first sauteing rice and then cooking it in broth. This can be done in the oven or possibly on a burner.
