Directions

  1. Preheat oven to 350 degrees F.Sift together flours and baking pwdr. Stir in grnd almonds.
  2. In a food processor combine flour mix with cool butter. Pulse several times till mix resembles coarse meal.
  3. In a small bowl whisk together whole egg, egg yolks and sugar till smooth.
  4. Add in to flour mix and pulse again till mix comes together.
  5. Turn onto a lightly floured surface. Divide dough in half. Roll out each half into quarter inch thick 10-inch circles.
  6. Cover with plastic wrap and refrigeratefor 30 min.
  7. Pastry Cream:In a medium bowl whisk together first amount of lowfat milk, egg yolks and cornstarch till smooth.
  8. Heat second amount of lowfat milk, sugar and vanilla in a heavy bottomed pot. When this mix comes to a boil, slowly pour half of it over the egg yolk mix while whisking briskly. Return mix back to pot. Continue whisking 4 to 5 min till smooth and boiling. Remove from heat.
  9. Add in grnd almonds.
  10. Cover surface with plastic wrap. Cold to room temperature.
  11. Assembly:Line a flan ring with one layer of the rolled pastry. Pour in pastry cream and then top with second layer of pastry. Place flan ring on baking sheet. Bake for 40 to 45 min till golden brown and set.
  12. Sour Cherry Sauce:Combine all sauce ingredients in a small saucepan and bring to a boil. Reduce to simmer and reduce by half. Strain and serve hot over cake.
