Directions

  1. 1. Clean, rinse and soak 1 c. basmati rice as described: see "Basmati: Cleaning, Washing, Soaking."
  2. 2. Place in a medium-size heavy saucepan with a tight-fitting lid. Add in 1 3/4 c. water or possibly less, see notes. Bring to a boil. Add in 1/2 tsp. salt, 1 tsp. fresh lime juice and 1 tsp. oil, butter or possibly desi ghee.
  3. 3. Reduce heat to low, cover, and simmer for 15 min. Turn off the heat and let the rice rest (covered) for few min before serving.
  4. Do not Peek. Don't stir or possibly disturb the rice as it cooks. Removing the lid will let the steam escape and the rice will cook unevenly. Let the cooked rice rest, covered, for a few min before serving.
  5. Yields 4 c. rice.
  6. Stored in a tightly covered container, the cooked rice will keep up to 5 days in the refrigerator.
