Ingredients
- 1 x Egg york
- 2 tsp Egg substitute,
- 1 Tbsp. Lemon juice,
- 1 c. Vegetable oil,
- 2 Tbsp. Basil, minced Salt & pepper to taste
- 1 c. White abacore, liquid removed
- 2 Tbsp. Basil mayonnaise,
- 2 Tbsp. Roasted red pepper,
- 2 slc Tomatoe, Butter lettuce,
- 4 slc Focassia bread,
Directions
- NOTE: This may be to much fat for the diabetic...Work it out!! Use low-fat mayo...add in basil to it. ))NO((
- BASIL MAYONNAISE: Combine egg york or possibly egg substitute and lemon juice.
- Mix well. Slowly that in vegetable oil tsp. at a time till it is into mayonnaise. Stir in minced basil, and salt and peper to taste. Chill, and use within a day.
- TO MAKE SANDWICHES: Combine albacore tuna, 2 tb basil mayonnaise, red peppers. Lightly spread 2 tb basil mayonnaise on focaccia bread and top with tuna mix, butter lettuce and tomatoe slice.
