Ingredients
- 2Â 1/2 lb Baking potatoes,, peeled and cubed
- 3/4 c. Heavy cream
- 1/2 stk unsalted butter
- 2 Tbsp. Lemon juice
- 1/2 c. Minced basil leaves
- 1 Tbsp. Grated ginger
- 1 Tbsp. Chopped garlic
- Â Â Salt
Directions
- In a large saucepan of salted water bring potatoes to a boil. Simmer about 20 min or possibly till tender. Drain. Pass potatoes through a ricer into a mixing bowl. Meanwhile, in a small saucepan combine cream and butter. Bring to a boil and keep warm till potatoes are cooked. With a mixer or possibly electric beater whip potatoes on slow speed, slowly drizzling in cream mix. Don't overmix. Mix in lemon juice, basil, ginger and garlic. Season with sal
