Basic Tomato Sauce (Tomato Leather) Recipe

Ingredients

  • 1/3 c. Onion, minced very fine
  • 2 x Garlic cloves, chopped
  • 1 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Margarine or possibly 2 Tablespoons of either of above
  • 12 ounce Tomato paste
  • 1 tsp Salt pn Sugar
  • 2 tsp Parsley, minced Black Pepper pn Basil pn Oregano

Directions

  1. Saute/fry the onion and garlic together in the fat till they are soft and golden brown, stop before they begin to brown. Add in the rest of the ingredients and cook slowly for about 10 min.
  2. Spray a cookie sheet or possibly other flat pan with a nonstick spray. Spread the mix out in as thin a layer as possible - use two pans if necessary. Dry the sauce in the oven at 140 degrees F for about 6 hrs with the door propped open a crack. Don't overdry or possibly the reconstituted sauce will taste burned. Roll it up like fruit leather, and put into a plastic bag labled
  3. "Tomato Sauce." To reconstitute, add in triple the amount of water to the dry sauce, bring to a boil, and simmer five min. Will feed six with pasta.
