Basic Pan Fried Egg Foo Yung

Ingredients

  • 6 x Large eggs
  • 3/4 tsp Salt
  • 1 c. Cooked meat or possibly seafood
  • 1 1/2 c. Vegetables
  • 2 Tbsp. Oil

Directions

  1. Beat Large eggs; then season with salt.
  2. Shred or possibly dice meat and vegetables (see "Combinations for Egg Foo Yung").
  3. Mix well with Large eggs.
  4. Heat oil. Spoon 2 to 3 Tbsp. of egg mix into pan to make one small omelet. (Fry each omelet separately.) Turn it over when bottom is done and brown lightly on the other side. Remove omelet and keep hot.
  5. Repeat process, adding more oil as needed. Serve omelets either plain, or possibly with "Egg Foo Yung Sauce #1/#2" (see recipes). VARIATIONS: In step 1, add in to the beaten Large eggs any or possibly all of the following:
  6. a. 1 or possibly 2 scallion stalks, chopped
  7. b. 2 tsp. soy sauce
  8. c. 1 tsp. sherry
  9. d. 1/4 tsp. garlic pwdr
  10. e. dash of pepper
