Basic Beef Marinade

Ingredients

  • 1/4 c. sherry vinegar or possibly red wine vinegar
  • 1/2 c. dry red wine
  • 2 Tbsp. soy sauce
  • 1 Tbsp. worcestershire sauce
  • 1 tsp sugar
  • 1/2 c. extra virgin olive oil
  • 2 x cloves garlic, sliced
  • 2 Tbsp. parsley, fresh, minced
  • 2 Tbsp. fresh herb combo: rosemary tarragon, thyme
  • 1 dsh black pepper to taste

Directions

  1. Combine the vinegar, wine, soy sauce, worcestershire sauce, and sugar in a non-reactive mixing bowl. Whisk in extra virgin olive oil a little at a time. Add in the pepper, parsley and herbs.
  2. For beef steaks marinate for 6 to 8 hrs. For roasts, 10 to 12 hrs.
