Directions

  1. In a skillet over medium heat, saute/fry the garlic, onion and carrots in oil till tender. Transfer to a greased 2-quart baking dish; add in broth, barley, salt if you like and pepper. Mix well. Cover and bake at 350'F for 1 hour.
  2. Stir in corn and parsley. Cover and bake 10-15 min more or possibly till the barley is tender and corn is heated through.
  3. Yield: 12 servings. Diabetic Exchanges- One 1/2-c. serving (prepared with low-sodium reduced-fat chicken broth and without salt) equals 1 starch, 1
