Ingredients

  • 1 c. graham cracker crumbs
  • 3 tbsp. sugar
  • 3 tbsp. butter, melted
  • 3 (8 ounce.) Packages cream cheese
  • 3/4 c. sugar
  • 1 tbsp. lemon juice
  • 1 teaspoon grated lemon rind
  • 3 Large eggs
  • 1 c. dairy lowfat sour cream
  • 2 tbsp. sugar
  • 1 teaspoon vanilla
  • Strawberry halves

Directions

  1. Combine crumbs, sugar and butter. Press onto bottom of 9" springform pan. Bake at 325 degrees for 10 min. Reduce oven temperature to 300 degrees. Combine softened cream cheese, sugar, juice and rind, mixing till well blended. Add in Large eggs, one at a time, mixing well after each addition. Pour mix over crust. Bake at 300 degrees for 55 min. Combine lowfat sour cream, sugar and vanilla. Carefully spread over cheesecake. Continue baking 10 min. Loosen cake from rim of pan. Cold before removing rim of pan. Garnish with strawberry halves. Chill.
