Bananas on Toast Recipe

  • 100 gm unsalted butter
  • 3 tbsp brown sugar
  • juice of 1 lime
  • 4 bananas, peeled & cut into chunks
  • 4 thick slices raisin bread (or similar type of bread)


  1. Gently melt the butter, sugar and lime juice in a pot and reduce to a syrup, stirring now and again.
  2. Add the bananas, toss to coat well and then cook on a preheated ridged grill (or BBQ) until caramelised all over, basting with the syrup as you do so.
  3. Toast the bread and place on individual plates. Then top with banana and drizzle a little more of the syrup over and around.
