Banana Wheat Germ Muffins Recipe

Ingredients

  • 1 1/2 c. Unbleached Flour
  • 1 c. Toasted Wheat Germ
  • 1/2 c. Finely Minced Walnuts
  • 1/2 c. Firmly Packed Light Brown Sugar
  • 2 1/2 tsp Baking Pwdr
  • 1/4 tsp Grnd Nutmeg
  • 1/2 tsp Salt
  • 2 lrg Large eggs
  • 1 c. Mashed Ripe Bananas, (2-3 Bananas)
  • 1/2 c. Low-Fat Lowfat milk
  • 1/4 c. Canola Oil

Directions

  1. Preheat oven to 400 degrees. Butter the insides and top of a regular size
  2. 1/3 c.) muffin pan.
  3. In a medium size bowl thoroughly combine the flour, wheat germ, walnuts, sugar, baking pwdr, nutmeg and salt.
  4. Beat the Large eggs in a large bowl. Beat in the mashed banana, being certain to break up any large lumps. Beat in the lowfat milk and oil till smooth. Add in the dry mix to this bowl and stir just till it is proportionately moistened. Don't overbeat it.
  5. Spoon the batter into the prepared muffin pan. Bake about 17 min or possibly till a knife inserted in the center of a muffin comes out dry. Cold the muffins on a rack a few min before serving. They are better hot, not warm.
