If you have a food processor then making your own tahini is best. I toast my seeds first which gives the bread that extra nutty taste and smell.
Ingredients
- 1 cup whole wheat flour
- 1 cup white flour
- 2/3 cups sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 bananas
- 1/2 cup apple sauce
- 2/3 cups tahini
- 1/2 cup plain nonfat yogurt
- 2 eggs
- 2 tbsp milk ( I used almond milk)
- 4 tbsp honey
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350 degrees
- In a food processor combine bananas, tahini, yogurt, eggs, milk and honey. Puree until smooth.
- In a large bowl add flours, sugar, baking powder, soda and salt. Stir to combine and add the wet ingredients. Stir just until combined and then fold in chopped walnuts.
- Pour this into whatever baking pans you prefer. Muffin tins, cake pans or loaf pans.
- I used a large rectangular cake pan lined with parchment paper.
