Banana Nut Loaf With Streusel Topping

Ingredients

  • 1/4 c. brown sugar - (packed)
  • 2 Tbsp. flour
  • 1/4 tsp cinnamon
  • 2 Tbsp. unsalted butter (or possibly margarine or possibly shortening)
  • 1/4 c. minced walnuts or possibly pecans
  • 2 c. walnuts or possibly pecans
  • 3/4 c. finely-grnd walnuts or possibly pecans
  • 2 c. sugar
  • 2 1/2 c. flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 c. unsalted butter cut in pcs (or possibly margarine or possibly shortening)
  • 2 c. mashed bananas - (5 large)
  • 4 x Large eggs
  • 1/2 c. lowfat milk

Directions

  1. Note: Use the pans specified here; the loaves, that are moist and dense, will not bake properly in larger pans.
  2. For the Streusel Topping: Stir together the brown sugar, flour, cinnamon and butter just till crumbly; don't overmix. Stir in the minced walnuts. Cover and set aside.
  3. For the Loaves: Toast the nuts in a dry skillet over medium heat till lightly browned, 6 to 8 min. Chop them and set aside. Heat the oven to 350 degrees. Grease 4 (8- by 3 3/4-inch) disposable aluminum loaf pans; sprinkle them with the grnd nuts and set them aside.
  4. In a large mixing bowl, blend the sugar, flour, baking soda and salt. Add in the butter and blend till crumbly. With a rubber spatula, add in the minced walnuts and mix well. Beat together the bananas, Large eggs and lowfat milk. Pour the banana mix into the flour mix all at once. Stir gently just till all the dry ingredients are moistened; don't overstir.
  5. Spoon the batter into the loaf pans. Sprinkle each loaf with Streusel Topping. Bake till a toothpick inserted in the center comes out clean and the loaves come away from the sides of the pans, 45 min.
  6. This recipe yields 32 servings.
