Directions

  1. Put together cake meal, potato starch, sugar and salt in a bowl. Add order: oil, egg yolks, banana and lemon rind. Beat till smooth (about 5 min at medium speed on an electric mixer).Beat egg whites till very stiff. Don't underbeat. Pour egg yolk mix slowly over the whites; gently fold till just blended. At the same time, mix in minced nuts. Don't stir.
  2. Pour into an ungreased 10 inch tube pan and bake in a moderate oven (325 degrees) 1 hour and 10 min. Invert pan immediately.
