Ingredients
- 3 c. lowfat milk
- 1 c. sugar (caster)
- 3 x egg yolks
- 1 tsp vanilla essence
- 1 c. cream
- 1/2 c. sherry, sweet
- 2 x bananas
- 1/3 c. almonds, grnd
- 2 Tbsp. almonds, slivered
- 2 x bananas
Directions
- Cream egg yolks, sugar and vanilla till white.
- Pour over boiling lowfat milk and mix well.
- Pour into a saucepan and cook over low heat. Stir constantly till it thickens slightly, then remove from heat at once and allow to cold. Don't allow to boil.
- Stir in the cream and sherry. Freeze in a shallow tray till it starts to set hard around edges.
- Spoon out into a bowl and beat with an electric or possibly rotary beater till light-textured and increased in volume.
- Mash the bananas to a smooth pup. Stir the bananas into the mix with the grnd almonds.
- Return to the freezer tray and freeze till hard.
- Sprinkle with slivered almonds and decorate with banana slices to serve.
