Directions

  1. Cream egg yolks, sugar and vanilla till white.
  2. Pour over boiling lowfat milk and mix well.
  3. Pour into a saucepan and cook over low heat. Stir constantly till it thickens slightly, then remove from heat at once and allow to cold. Don't allow to boil.
  4. Stir in the cream and sherry. Freeze in a shallow tray till it starts to set hard around edges.
  5. Spoon out into a bowl and beat with an electric or possibly rotary beater till light-textured and increased in volume.
  6. Mash the bananas to a smooth pup. Stir the bananas into the mix with the grnd almonds.
  7. Return to the freezer tray and freeze till hard.
  8. Sprinkle with slivered almonds and decorate with banana slices to serve.
