These muffins are moist inside..you may add more or less chocolates depending on how you love chocolates, just reduce the sugar a bit because over-ripe bananas are already sweet
Ingredients
- 3 large bananas, mashed ( about 1 1/4 cups)
- 1/4 cup coconut oil
- 3/4 cup coconut milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1 cup dessicated coconut
- 1/2 cup mini white chocolate chips
- 1/2 cup mini semi-sweet chocolate chips
Directions
- Preheat oven to 375 degrees F.
- In a large bowl, combine mashed bananas, eggs, oil, coconut milk and vanilla, mix well. In a separate bowl, sift together flour, salt and baking powder; add dessicated coconut, mix to combine then add to the banana mixture, mix just until combine..DO NOT overmix or your muffins will get tough. Spoon into well-greased muffin pans or lined muffin pans. Bake for about 20-25 minutes; do not overbake, muffins should be soft inside and the top, crusty. I made about adozen and a half muffin with this batter using regular muffin pans.
