Ingredients

  • 1/2 c. Margarine
  • 1 c. Sugar
  • 1/2 c. Egg Beaters 99% egg substitute
  • 1 c. Mashed bananas
  • 1/2 tsp Vanilla
  • 1/2 c. Lowfat sour cream
  • 2 c. Flour, sifted
  • 1 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 c. Nuts, finely minced
  • 1/4 c. Sugar
  • 1/2 tsp Cinnamon

Directions

  1. Cream margarine till light. Gradually beat in sugar. Beat in Large eggs, one at a time. Mix well. Add in bananas, vanilla & lowfat sour cream. Sift dry ingredients together & fold into creamed mix just till blended.
  2. Topping: Combine nuts, sugar & cinnamon.
  3. Sprinkle half the topping over bottom of a well greased & floured tube pan.
  4. Spoon in half of the batter. Sprinkle with remaining topping & cover with remaining batter.
  5. Bake at 350F for 45 min. When finished, invert pan & cold. Sprinkle top with powdered sugar, if you like.
  6. NOTES : 2 Large eggs can be used instead of Egg Beaters. Nonfat lowfat sour cream can be used.
