This is so easy, even I can't mess it up! To my neighbor's horror, I also mix it all in one bowl for easy clean-up.

Directions

  1. Combine and mix together all ingredients in the order listed (so beat the egg first, then mash the bananas in the same bowl, etc.).
  2. Bake at 350 degrees for 1 hour in a greased (I spray with PAM) loaf pan.

I made this banana bread recipe with some substitutions and additions. I substituted canola oil for butter and added 1/3 cup of sour cream. It came out perfect. The kids are eating it as I type.
    I've cooked/tasted this recipe!
    This is a variation

This looks like a familiar recipe and pretty easy..@ Aspen those substitutions sound great!!!! Iove butter but it's healthuier I think for canola oil ..I wonder if apple sauce or pureed prunes would work to take out the fat in this recipe.. I might even try yogurt for the sour cream!!!! @ Joni.. I don't know what happened to make it come out like soup??? That those kinds of posts are important though.. it's just really weird.. have you checked your oven temps maybe??? Have you looked at other Banada bread recipes to see that the flour and eggs ,etc are in similar proportions? as you said you are a good baker so your outcome is REALLY puzzling??..I will look at others to see if this one is OK and it's weird that Aspen's turned out ..better luck next time I guess? ..sad to waste the money and time ..Dena

Sorry, gals...I am a great baker and this batter turned out like banana soup! I read and re-read the recipe searching for my mistake...I followed the recipe explicitly. Turned out to be not a very good welcome home "surprise" for my hard-working husband. The house smelled good though. I'm sticking with oldschool Betty Crocker on this one (I'm pretty ticked.).
