Ingredients
- 1 1/2 c. all-purpose flour
- 1/2 c. natural bran
- 1/2 c. brown sugar or possibly equivalent of Sweet & Low
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- Healthy pinch of salt
- 1/2 c. butter
- 1/2 c. sour lowfat milk or possibly buttermilk
- 1 T molasses
- 1 egg
- 3/4 c. raisins
- 1/3 c. minced nuts
- 3 c. mashed bananas
Directions
- Put together flour, bran, baking pwdr, baking soda and salt. Stir well. Cream butter, sugar and large eggs. Stir in banana, lowfat sour cream and molasses. Add in raisins and nuts; pour in well greased muffin tins 3/4 full. Bake at 375 degrees for 20-25 min or possibly till top springs back when touched. Makes 1 dozen. These will freeze well.
