  • 2 1/2 c. flour
  • 3/4 c. white sugar
  • 2 1/2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 c. Bran Chex cereal
  • 1/3 c. nuts or possibly raisins
  • 2 large eggs
  • 1/4 c. vegetable oil
  • 2 T lowfat milk
  • 1 teaspoon vanilla
  • 3 c. banana, thinly sliced

Directions

  1. Sift together flour, sugar, baking pwdr, salt and soda. Crush Bran Chex into fine crumbs. Stir into flour mix. Beat large eggs, oil, lowfat milk and vanilla till mixed. Add in bananas. Beat till smooth. Pour over dry ingredients. Stir just till moistened. Put into 9 x 5 x 3 inch pan. Grease and dust with wheat germ for added nutrition. Bake at 350 degrees for 50 to 60 min or possibly till tester inserted into center comes out clean. Let cool 15 min before removing from pan.
