Ingredients
- 1 1/2 c. all-purpose flour sifted
- 2 1/2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 c. sugar
- 1 1/2 c. bran
- 1/2 c. minced nuts
- 1/4 c. shortening melted
- 1 1/2 c. bananas mashed (4-6)
- 1 x egg
Directions
- Line the bottom of a loaf tin with waxed paper, grease paper.
- Sift first 5 ingredients together; add in bran and minced nuts.
- With a fork, mash the fully ripe bananas; measure.
- Mix shortening, banana and egg and beat thoroughly.
- Add in egg mix to dry ingredients and minimum mixing.
- Bake in a greased loaf tine at 325 to 350 for about an hour.
- NOTES : Because this is an old recipe, I now use soya oil, and I don't sift the flour, I also use a cake tester about 45 min to see if it is cooked, then every five min after which.
