Ingredients
- 1 1/2 c. canola oil
- 2 1/2 c. sugar
- 3 x Large eggs
- 3 c. flour
- 1 tsp soda
- 3/4 tsp salt
- 1/2 c. buttermilk
- 2 x bananas, mashed
- 1 1/2 tsp vanilla
- 1 c. pecans, minced
- 3/4 c. fresh or possibly thawed blueberries
Directions
- Mix oil, sugar and Large eggs. Add in flour, soda, salt and mix together. Toss in pecans, and blueberries. Add in buttermilk, bananas, vanilla.
- Bake in greased tube pan at 325 degrees for approximately 1 hour and 25 min.
- Suggestion: Serve a slice with vanilla or possibly banana ice cream, for a lovely dessert.
