,%20there%20are%20any%20number%20of%20ways%20of%20using%20them.%3C/p%3E%3Cp%3EYou%20can%20go%20the%20fancy%20route%20(like%20these%20two%20beautiful%20cakes%20that%20were%20left%20in%20the%20comments%20on%20my%20Facebook%20post%20by%20two%20lovely%20readers);%20you%20can%20go%20the%20completely%20not-fancy%20route,%20and%20smash%20them%20up%20to%20make%20a%20crude%20yet%20relatively%20healthy%20jam;%20or%20you%20can%20plump%20for%20something%20somewhere%20in%20the%20middle,%20like%20I%20did.%3C/p%3E%3Cp%3EMy%20balsamic%20roasted%20strawberries%20with%20coconut%20cream%20are%20pretty%20to%20look%20at,%20but%20really%20easy%20to%20make.%20It%E2%80%99s%20basically%20just%20some%20roasted%20strawberries%20layered%20up%20with%20some%20whipped%20coconut%20cream,%20and%20topped%20with%20an%20extra%20drizzle%20of%20balsamic%20reduction.%3C/p%3E%3Cp%3EIt%20sounds%20fancy,%20it%20looks%20fancy,%20it%E2%80%99s%20really%20easy.%3C/p%3E%3Cp%3EYou%20know%20sometimes%20when%20you%20open%20a%20tin%20of%20coconut%20milk,%20and%20it%E2%80%99s%20separated%20into%20a%20solid%20part%20on%20top,%20with%20a%20watery%20liquid%20left%20underneath?%20To%20make%20the%20whipped%20coconut%20cream,%20all%20you%20need%20to%20do%20is%20take%20the%20solid%20part,%20and%20whip%20it.%20Whip%20it%20good.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20my%20coconut%20cream%20was%20still%20on%20the%20thin%20side,%20but%20it%E2%80%99s%20sometimes%20possible%20to%20whip%20it%20up%20until%20it%20becomes%20so%20thick%20that%20you%20can%20make%20a%20quenelle%20shape,%20like%20we%20did%20at%20my%20supper%20club.%20Coconut%20milk%20varies%20so%20much%20from%20brand%20to%20brand,%20and%20even%20from%20tin%20to%20tin,%20that%20you%E2%80%99ll%20need%20to%20experiment%20to%20figure%20out%20how%20to%20get%20the%20consistency%20you%20want.%20Personally,%20I%E2%80%99m%20not%20bothered%20how%20thick%20the%20coconut%20cream%20is%20%E2%80%93%20it%E2%80%99s%20completely%20delicious%20either%20way.%3C/p%3E%3Cp%3EPlus,%20if%20it%E2%80%99s%20a%20little%20thinner,%20you%20can%20layer%20it%20up%20nicely%20with%20the%20roasted%20strawberries,%20so%20the%20coconutty%20goodness%20gets%20right%20down%20to%20the%20bottom%20of%20the%20bowl.%20It%E2%80%99s%20perfect%20topped%20with%20an%20extra%20drizzle%20of%20reduced%20balsamic%20%E2%80%93%20alongside%20the%20super%20sweet%20strawberries%20and%20coconut%20cream,%20you%20don%E2%80%99t%20get%20a%20super%20vinegary%20hit%20(which%20wouldn%E2%80%99t%20be%20too%20nice),%20just%20a%20slight%20tang.%20It%E2%80%99s%20just%20lovely!%3C/p%3E%3Cp%3ESo%20go%20forth%20and%20roast,%20and%20whip,%20and%20drizzle,%20and%20let%20me%20know%20what%20you%20think!%3C/p%3E%3Cp%3EIf%20you%20like%20my%20recipes,%20don%E2%80%99t%20forget%20to%20follow%20me%20on%20social%20media!%3C/p%3E%3Cp%3EFacebook%20(for%20recipe%20updates%20and%20occasional%20chatter)%3C/p%3E%3Cp%3EInstagram%20(for%20everyday%20life%20stuff)%3C/p%3E%3Cp%3EPinterest%20(for%20things%20that%20make%20me%20hungry)%3C/p%3E%3Cp%3ETwitter%20(for%20all%20the%20other%20nonsense)%3C/p%3E%3Cp%3ELeave%20the%20tin%20of%20coconut%20milk%20in%20the%20fridge%20overnight.%20The%20next%20day,%20open%20the%20tin%20without%20shaking%20it%20-%20the%20coconut%20milk%20should%20have%20separated%20into%20a%20thick%20white%20cream,%20with%20a%20runny%20liquid%20underneath.%20Carefully%20scoop%20the%20thick%20white%20layer%20(probably%20about%20the%20top%20%E2%85%93%20of%20the%20tin)%20into%20a%20bowl,%20and%20whisk%20it%20for%20several%20minutes%20until%20it%20is%20thick%20and%20frothy.%20Add%20the%20icing%20sugar,%20and%20mix%20well.%20Heat%20the%20oven%20to%20200%C2%B0C%20(Gas%20Mark%206%20/%20400%C2%B0F).%20Cut%20the%20strawberries%20into%20quarters%20(or%20halves%20if%20they%E2%80%99re%20quite%20small),%20and%20toss%20them%20in%201tbsp%20of%20balsamic%20vinegar.%20Spread%20them%20out%20in%20a%20single%20layer%20on%20a%20baking%20tray,%20and%20roast%20for%20around%2010%20minutes,%20until%20soft%20but%20still%20holding%20their%20shape.%20While%20the%20strawberries%20are%20roasting,%20add%20the%20extra%202tbsp%20of%20balsamic%20vinegar%20to%20a%20small%20saucepan,%20and%20bring%20to%20the%20boil.%20Cook%20for%20a%20few%20minutes,%20until%20the%20vinegar%20has%20halved%20in%20volume,%20and%20is%20thick%20and%20syrupy.%20Serve%20the%20roasted%20strawberries%20with%20the%20whipped%20coconut%20cream%20and%20the%20balsamic%20reduction.%20%203.3.2998%3C/p%3E%3Cp%3ELeftover%20strawberries?%20Make%20these%20cute%20summer%20fruit%20tarts%20with%20honeyed%20ricotta:%3C/p%3E){kind=link}
