Ingredients
- 5 lb. bag of potatoes â peeled and sliced in wedges
- 8 oz. of Monterey Jack or Cheddar cheese - grated
- Pat dry the potatoes and place in a bowl.
- Rub for Fries:
- ½ tsp. ground cumin
- ½ tsp. black pepper
- ½ tsp. brown sugar
- ½ tsp. garlic powder
- ½ tsp. ground curry powder
- ¼ tsp. chili powder
- ¼ tsp. salt
- Olive oil to make a paste
- ~ Cilantro Dipping Sauce ~
- Ingredients:
- 1 bunch of fresh cilantro
- 5 cloves of garlic
- 2 vine ripe tomatoes
- 2 tablespoons of balsamic vinegar
- 1 tsp. of sugar
- ¼ tsp. salt
- ¼ tsp. black pepper
Directions
- Preheat Oven 350 degrees:
- Combine all of the spices in a small bowl and drizzle olive oil to make a paste from the rub.
- Place the rub in with the potatoes and toss the potatoes so each potato wedge is coated.
- Drizzle a baking pan with olive oil and place the potatoes in the pan.
- Bake 40-45 minutes until the potatoes are golden.
- Remove the potatoes to a platter and scatter the grated cheese on the potatoes while they are hot.
- ~ Cilantro Dipping Sauce ~
- Combine all of the above ingredients in a food processor and give a few good chops.
- Serve on the side with the potato wedges to dip.
