Baked Spinach With Eggs Recipe

  • 1/2 c. butter
  • 1 x onion peeled, minced
  • 2 x garlic cloves crushed
  • 1 lb spinach cleaned, stemmed, and cut into strips
  • 1/2 tsp salt
  • 1 c. grated mozzarella cheese divided
  • 1 tsp paprika
  • 1/4 tsp freshly-grnd black pepper
  • 1/8 tsp grnd nutmeg
  • 4 x Large eggs
  • 1/4 c. 2% lowfat milk

Directions

  1. Preheat oven to 350 degrees. Lightly grease a medium baking dish.
  2. In a large stockpot, heat butter over medium heat. Add in onion and garlic and saute/fry for 2 to 3 min to soften. Add in spinach and salt. Reduce heat to low. Cover and steam for 5 min; remove from heat.
  3. Sprinkle half of the mozzarella cheese in the bottom of prepared baking dish. Spoon in spinach mix and sprinkle with paprika, pepper and nutmeg.
  4. In a medium bowl, beat together egg and lowfat milk; pour over spinach mix. Top with remaining mozzarella cheese. Bake till the cheese bubbles, about 20 min. Let stand 5 min before cutting.
  5. This recipe yields 6 servings.
