Baked Salmon Croquette

Ingredients

  • 1 (15 1/2 ounce) can pink salmon
  • 2 T onion (finely minced)
  • 1/3 c. flour
  • 1 c. crushed corn flakes (divided)
  • 1 stick butter
  • 1/2 teaspoon salt
  • Lowfat milk
  • 1/4 teaspoon pepper
  • 1 T lemon pepper

Directions

  1. Drain salmon, reserve liquid, add in sufficient lowfat milk to measure 1 cup; set aside.Heat butter in heavy saucepan over low heat. Add in onion, cook till tender. Add in flour, stirring till smooth. Cook 1 minute, stirring constantly till thickened and bubbling. Stir in salt and pepper.
  2. Flake salmon with a fork. Add in lemon juice and 1/2 cup corn flakes; stir well. Add in sauce, mix well. Refrigerate mix. Shape it into croquettes. Roll in remaining corn flakes. Place on lightly greased baking sheet. Bake at 400 degrees for 30 min.
