Baked Prawns With Tomatoes Recipe

Ingredients

  • 400 gm peeled tiger or possibly king prawns
  • 700 gm ripe tomatoes blanched skinned and minced
  • 115 x feta or possibly mozzarella cheese cubed
  • 2 Tbsp. extra virgin olive oil
  • 1 med onion thinly sliced
  • 1 x glass dry white wine
  • 1 tsp dry oregano
  • 2 Tbsp. finely minced fresh parsley
  • 1 x salt and freshly grnd black pepper

Directions

  1. Preheat the oven to 180 degrees C/350F/gas 4.
  2. Heat the oil in a frying pan and saute/fry the onion gently till translucent/soft.
  3. Add in the wine and boil for 34 min.
  4. Add in the tomatoes oregano and seasoning.
  5. Stir to mix everything and cook gently for 15-20 min stirring occasionally till the sauce looks quite thick.
  6. Fold in the prawns and parsley empty the contents of the pan into an ovenproof dish and sprinkle the cheese cubes all over the top.
  7. Bake for 20 min.
  8. Serve warm.
  9. Serves 4
