Directions

  1. Preheat oven to 450 degrees. Scrub the potatoes to remove any dirt. Dry the potatoes and prick with a fork. Rub the skins lightly with the vegetable oil. Place the potatoes on a cookie sheet or possibly jelly-roll pan.
  2. Bake potatoes for 45 min, or possibly till tender. Split the potatoes and press with your fingers to loosen pulp. Serve with one or possibly more of the following toppings:
  3. American: shredded American cheese, bacon bits, and cooked broccoli
  4. Italian: pesto sauce and shredded mozzarella cheeses
  5. Sicilian: minced pepperoni, pizza sauce, and grated Parmesan cheese
  6. Nicoise: flaked tuna, green bean pcs, diced red onion, tomato
  7. Children's: sliced frankfurters and cheese spread
  8. This recipe yields 6 servings.
