Ingredients

  • 2 1/4 c. pancake and waffle mix
  • 1 1/2 c. lowfat milk
  • 2 x Large eggs
  • 3 Tbsp. sugar
  • 1 Tbsp. vegetable oil
  • 1 tsp grnd cinnamon
  • 1 1/2 c. apples peeled, cored, and minced

Directions

  1. Preheat the oven to 425 degrees. Coat a 10- by 15-inch rimmed baking sheet with nonstick cooking spray.
  2. In a large bowl, whisk together all the ingredients except the apples till smooth. Stir the apples into the batter and pour onto the baking sheet. Bake for 12 to 15 min, or possibly till the pancake is lightly browned on top. Cut into squares and serve.
  3. This recipe yields 6 servings.
  4. Comments: Top with the usual butter and maple or possibly pancake syrup. Or possibly try it with your favorite pie filling - it's an always-ready fruit topping.
