Baked Lamb Recipe

I'm normally not a huge lamb fan, but this was really good. I think it'd be just as good if you used beef or buffalo if lamb isn't your thing.

Ingredients

  • 3-4 lb boneless leg of lamb or roast
  • 2 garlic cloves, sliced thin
  • large strips of lemon rind, cut into pieces
  • 1/4 c dried coriander (or 1/2 c fresh if you can find it)
  • 3 T fresh parsley, chopped
  • 2 T olive oil

Directions

  1. Trim the lamb of any excess fat caps or sinew, as needed.
  2. Make little slits with your knife all over the lamb.
  3. Into each slit, add one slice of garlic and 1 piece of the lemon rind.
  4. Combine the coriander, parsley, olive oil and salt and pepper in a small bowl,
  5. Rub all over the lamb.
  6. Cook the lamb as desired, until the internal temperature reads 165. (I cooked mine on the grill)
