I'm normally not a huge lamb fan, but this was really good. I think it'd be just as good if you used beef or buffalo if lamb isn't your thing.

Ingredients
- 3-4 lb boneless leg of lamb or roast
- 2 garlic cloves, sliced thin
- large strips of lemon rind, cut into pieces
- 1/4 c dried coriander (or 1/2 c fresh if you can find it)
- 3 T fresh parsley, chopped
- 2 T olive oil
Directions
- Trim the lamb of any excess fat caps or sinew, as needed.
- Make little slits with your knife all over the lamb.
- Into each slit, add one slice of garlic and 1 piece of the lemon rind.
- Combine the coriander, parsley, olive oil and salt and pepper in a small bowl,
- Rub all over the lamb.
- Cook the lamb as desired, until the internal temperature reads 165. (I cooked mine on the grill)
