Ingredients

1 c. Yellow cornmeal
1 c. All-purpose flour
1 Tbsp. Baking pwdr
1 tsp Sugar
1 tsp Salt
1 tsp Pepper
2 lrg Large eggs, lightly beaten
3/4 c. Lowfat milk
1/4 c. Vegetable oil
1/2 c. Minced onion

Directions

Combine first 6 ingredients in a large bowl. Make a well in the center and set aside. Combine the remaining ingredients. Add in to dry mix. Stir till moistened. Coat miniature- muffin pans with cooking spray. Spoon 1 Tbsp. batter into each c.. Bake at 425 F for 15 min. Remove from pans and serve immediately.
Yield: 3 dozen
