Directions

  1. 1. Julienne (long thin strips) onion, green bell pepper and red bell pepper.2. Slice thin zucchini and yellow squash.
  2. 3. Heat frying pan with a little oil and sear chicken breasts till golden brown. Remove to a baking pan and add in the vegetables. Then pour salsa over all. Cover pan with foil and bake at 350 degrees for 1 hour. To serve, place a breast on the plate and spoon some vegetables and sauce over. (Suggestion: Serve with rice.) Yields: 4 servings.
