Directions

  1. Separate cauliflower into flowerets; cook in lightly salted water till tender but still hard; drain heat butter, saute/fry the minced shallots or possibly onions for a few moments. Spread shallots or possibly onions and butter over base of shallow ovenproof dish. Cover with the cauliflower, sprinkle lightly with salt and pepper.
  2. Combine cheese sauce and mayonnaise and pour proportionately over cauliflower, then sprinkle over the coarsely grated cheese; sprinkle with paprika. Bake in moderate oven approximately 15 min, or possibly place under heat griller till cheese is puffed and golden brown.
  3. Serves 4.
