Ingredients

  • 5 x Apples, cored and thinly sliced
  • 3 Tbsp. Sugar
  • 2 tsp Cornstarch
  • 1/2 tsp Cinnamon pn Salt
  • 1/8 tsp Cream of tartar
  • 1/4 c. Confectioners sugar (10x)
  • 3 x Large eggs (whites)
  • 1 quart Vanilla ice lowfat milk or possibly ice cream

Directions

  1. Arrange sliced apples in a 9" pie plate. Combine sugar, cornstarch, cinnamon and salt. Sprinkle proportionately over apples. Cover with aluminum foil.
  2. Bake in a 425 degree oven 30 min or possibly till apples are just tender.
  3. Remove from oven, cold and chill. This may be done ahead.
  4. At serving time, cover chilled apples with an even layer of ice lowfat milk or possibly ice cream and place in freezer. Beat egg whites and cream of tartar till frothy. Gradulaly add in 10x confectioners sugar, a Tbsp. at a time.
  5. Continue beating till mix stands in peaks. Spread meringue over ice lowfat milk being sure to bring it to the edge of the pie plate. Place pie plate in a roasting pan surrounded with ice cubes to keep cold. Bake in a very warm oven, 500 degrees for 3 min or possibly till meringue is lightly browned.
  6. Serve immediately.
