How can Hawaiian sweet bread be used in both home cooking and upscale, Boston dining?
In endless ways, if you ask Courtney Taira. Taira – the granddaughter of the founder of King's Hawaiian bread – recently teamed up with local chef William Kovel to hold a special event at Kovel’s Cambridge restaurant, Catalyst.
King’s Hawaiian is a well known national brand (especially out West), and Catalyst has become a local favorite known for its clean, well-thought out food using fresh regional ingredients. So when I was offered the chance to attend the event and try several of Kovel’s dishes incorporating King’s Hawaiian bread, I knew I would be in for a treat.

,%20and%20Catalyst%20has%20become%20a%20local%20favorite%20known%20for%20its%20clean,%20well-thought%20out%20food%20using%20fresh%20regional%20ingredients.%20So%20when%20I%20was%20offered%20the%20chance%20to%20attend%20the%20event%20and%20try%20several%20of%20Kovel%E2%80%99s%20dishes%20incorporating%20King%E2%80%99s%20Hawaiian%20bread,%20I%20knew%20I%20would%20be%20in%20for%20a%20treat.%3C/p%3E%3Cp%3EThe%20experience%20didn%E2%80%99t%20disappoint.%20We%20started%20out%20with%20mimosas%20and%20hors%20d%E2%80%99oeuvres,%20and%20the%20chicken%20liver%20mousse%20crostini,%20with%20added%20kick%20from%20pickled%20onion%20and%20whole%20grain%20mustard,%20quickly%20became%20a%20group%20favorite.%20Another%20outstanding%20choice%20was%20the%20seared%20foie%20gras%20with%20braised%20cherry%20and%20orange%20on%20sweet%20bread.%20It%20was%20interesting%20(and%20delicious!)%20to%20see%20the%20King%E2%80%99s%20Hawaiian%20product%20used%20in%20various%20forms%20as%20sweet%20bread,%20crostini,%20and%20garlic%20chips.%3C/p%3E%3Cp%3EFoie%20Gras%20Toast%3C/p%3E%3Cp%3ELunch%20continued%20with%20two%20additional%20dishes.%20I%20thought%20the%20first%20%E2%80%93%20ahi%20tuna%20with%20local%20greens,%20sheep%E2%80%99s%20milk%20feta,%20black%20olive%20tapenade%20and%20King%E2%80%99s%20Hawaiian%20crostini%20%E2%80%93%20was%20well%20done.%20The%20tuna%20was%20seared%20nicely%20and%20complimented%20by%20the%20light%20greens,%20while%20the%20tapenade%20cut%20through%20and%20offered%20sharp,%20but%20not%20overpowering%20contrast.%3C/p%3E%3Cp%3EAhi%20Tuna%3C/p%3E%3Cp%3EWhile%20Hawaiian%20bread%20was%20used%20in%20every%20dish,%20I%20felt%20it%20was%20the%20star%20of%20my%20main%20course:%20lamb%20tenderloin%20with%20baby%20artichoke,%20treviso,%20and%20bread%20salad%20using%20King%E2%80%99s%20Hawaiian%20sweet%20round%20bread.%20The%20lamb%20was%20cooked%20beautifully,%20but%20I%20was%20more%20surprised%20and%20delighted%20by%20the%20balance%20of%20the%20bread%20salad.%20The%20baby%20artichokes%20offered%20a%20hint%20of%20acid%20while%20the%20treviso%20contributed%20a%20bitter%20note,%20all%20of%20which%20mixed%20well%20with%20the%20dish%E2%80%99s%20sweet%20sauce.%20It%20was%20no%20wonder%20(to%20me%20or%20those%20sitting%20around%20me)%20that%20I%20completely%20cleared%20that%20plate.%3C/p%3E%3Cp%3ELamb%20Tenderloin%3C/p%3E%3Cp%3EWe%20rounded%20out%20lunch%20with%20white%20chocolate%20chip%20bread%20pudding%20topped%20with%20caramel%20sauce,%20preceded%20by%20a%20live%20demo%20given%20by%20Chef%20Kovel%20and%20Courtney.%20Just%20based%20on%20food%20alone,%20I%20thoroughly%20enjoyed%20the%20event.%20Even%20better,%20though,%20was%20the%20chance%20to%20chat%20with%20Courtney%20about%20King%E2%80%99s%20Hawaiian%E2%80%99s%20philosophy%20and%20the%20company%E2%80%99s%20emphasis%20on%20partnering%20only%20with%20likeminded%20companies%20with%20similar%20cultures%20(e.g.%20collaborations%20with%20Firehouse%20Subs%20and%20Arby%E2%80%99s%20being%20recent%20examples).%3C/p%3E%3Cp%3EChef%20Kovel%20in%20Action%3C/p%3E%3Cp%3EI%20also%20really%20enjoyed%20seeing%20Chef%20Kovel%20in%20action%20and%20hearing%20his%20thoughts%20on%20the%20working%20the%20Hawaiian%20bread.%20Financefoodie.com%20first%20met%20him%20four%20years%20ago%20when%20he%20was%20the%20chef%20de%20cuisine%20at%20the%20award%20winning%20Aujourd%E2%80%99hui,%20and%20it%20was%20a%20pleasure%20to%20see%20him%20continuing%20his%20passion%20for%20crisp,%20technique%20driven%20food%20through%20the%20day%E2%80%99s%20special%20menu.%20As%20the%20event%20concluded,%20Chef%20Kovel%20thanked%20everyone%20for%20coming%20and%20reinforced%20Courtney%E2%80%99s%20sentiments%20about%20the%20Hawaiian%20bread%E2%80%99s%20versatility.%20Based%20on%20my%20experience%20trying%20it%20in%20multiple%20forms%20and%20combinations,%20I%20can%E2%80%99t%20argue%20with%20that%20conclusion%20about%20King%E2%80%99s%20Hawaiian:%20useful%20in%20endless%20ways,%20in%20both%20home%20cooking%20and%20upscale,%20Boston%20dining.%3C/p%3E%3Cp%3E****Giveaway****%3C/p%3E%3Cp%3ECongrats%20Katie!%3C/p%3E%3Cp%3EKing's%20Hawaiian%20and%20Finance%20Foodie%20wants%20to%20give%20one%20lucky%20reader%20a%20taste%20of%20Hawaii%20at%20home!%20One%20reader%20will%20receive%20an%20%22Aloha%20Basket%22%20consisting%20of:%201%20wicker%20basket%20with%20tropical%20cloth%20lining%20with%20a%20variety%20of%20King%E2%80%99s%20Hawaiian%20bread%20products,%20King%E2%80%99s%20Hawaiian%20Toasted%20Coconut%20Coffee,%20King%E2%80%99s%20Hawaiian%20apron,%20King%E2%80%99s%20Hawaiian%20sunglasses,%20King%E2%80%99s%20Hawaiian%20recipe%20book%20and%20King%E2%80%99s%20Hawaiian%20product%20coupons%3C/p%3E%3Cp%3EThere%20are%20THREE%20ways%20to%20enter%3C/p%3E%3Cp%3E2.%20Follow%20Finance%20Foodie%20on%20Twitter%20(leave%20separate%20comment%20telling%20me%20this)%3C/p%3E%3Cp%3E3.%20Reblog%20/%20Retweet%20this%20giveaway%20(leave%20separate%20comment%20telling%20me%20this)%3C/p%3E%3Cp%3EContest%20ends%20Friday,%20July%2012,%202013%20at%205pm%20EST.%20Winners
