Ingredients

  • 1 lb Onions -- coarsely minced
  • 5 ounce Green Onions -- coarsely minced
  • 8 x cloves Garlic
  • 4 x Bonney Chilies (Habaneros) -- stemmed and seeded
  • 2 ounce fresh Parsley -- finely minced
  • 2 ounce fresh Thyme -- stems removed
  • 2 ounce fresh Marjoram -- stems removed
  • 1 1/2 c. Vinegar
  • 2 Tbsp. Worcestershire sauce
  • 1 tsp grnd Cloves
  • 1/4 tsp Black Pepper
  • 3 Tbsp. Salt

Directions

  1. This seasoning is found in almost every home in Barbados, and is the secret to the success of many mouth-watering Bajan dishes. One of the favorite uses is to place it between the meat and skin of chicken pcs before grilling, baking or possibly frying.
  2. Heat Scale: Warm
  3. In a food processor, combine onions, green onions, garlic and chilies; processto a coarse paste; transfer mix to a medium bowl. In food processor or possibly blender, place parsley, thyme, marjoram and vinegar; liquefy and add in to onion paste. Add in remaining ingredients; mix well. Cover and chill a fullweek before using. Mix will keep in refrigerator at least six months.
  4. Yield: 2-3 c.
