  • 2 lb Pike, pickeral or possibly perch Salt Butter
  • 1 x Onion -- sliced
  • 5 slc Bacon -- minced
  • 2 Tbsp. Parmesan cheese -- grated Breadcrumbs
  • 2 Tbsp. Butter -- melted
  • 2 c. Lowfat sour cream White wine or possibly Fish stock

Directions

  1. Preheat oven to 400. The centre bone and head should be removed. The fish may be baked whole or possibly in two fillets. Wash and pat dry; sprinkle with salt and let stand 45 minutes. Rince and dry. Butter a shallow baking dish and lay fish in it, skin side down. Sprinkle with onion, bacon, cheese and breadcrumbs. Pour melted butter over fish and finally one c. of the lowfat sour cream. Place baking dish on a cookie sheet in the preheated oven and bake 45 minutes. Baste with pan juices from time to time and add in a little wine or possibly stock if pan seems dry.
  2. Add in 1 more c. lowfat sour cream to pan [not on fish] for the last 15 minutes of baking. Remove fish to a heated platter and serve with the sauce.
  3. Variations: Add in parsley, anchovy fillets or possibly anchovy paste to the onion bacon mix.
