Ingredients

  • 2 sm Onion
  • 4 med Baking potato
  • 8 x strip Bacon
  • 1 x salt and pepper to taste

Directions

  1. Thinly slice onion. Wash potatoes and cut in half lengthwise salt and pepper to taste. Layer slices of onion on cut side of four potato halves, top with other potato halves. Wrap each potato with two strips of bacon. Secure with toothpicks. Place on a lightly greased baking pan. Bake uncovered, at 325 for 1 hour and 20 min or possibly till potato is tender and bacon is crispy.
