My boys love homemade pizza. Sometimes we get in a pizza rut, so I try to look for recipes that are not our usual ham and pineapple. Just to jazz things up a bit. My 12 year old actually found this Potato Pizza recipe in one of my cookbooks and and asked if we could try it. I have never heard of potato pizza, but I figured anything with bacon is bound to be good.

This pizza is far from traditional. It doesn't even have sauce! But it was hearty and delicious, and the whole family loved it. I was worried that my kids would complain about the onions, because they will not touch pizza with onions. But since it cooked up with the bacon, it just blended right in and added great flavor. Even the 6 year old finished off his pieces without picking anything off. Score!

To make this recipe even easier, you could use a can of pizza crust and leftover or instant mashed potatoes.

Bacon Potato Pizza

Boil potatoes in salted water till tender. Roll pizza crust out on a 14" pizza pan and prick all over with a fork. Bake at 350 for about 15 minutes or till barely browned. Drain and mash potatoes. Add milk and salt to taste. Spread over crust. Partially cook bacon in a medium hot skillet. Drain off some of the fat. Add onion and red pepper. Cook till bacon is crisp and veggies are tender. Drain really well and sprinkle over potatoes. Top with cheeses. Bake at 375 for 15-20 minutes or till cheese is melted.
