Ingredients
- 1/2 lb Raw bacon, cut in 1/2" pcs
- 2 x Large eggs
- 3 Tbsp. Vegetable oil
- 3 c. Cool cooked rice
- 1 1/2 Tbsp. Soy sauce
- 1/4 c. Green onions, in 1/4" pcs
Directions
- Fry bacon in wok or possibly frying pan till crisp. Drain bacon on paper towel.
- Beat Large eggs till yolks & whites are thoroughly mixed. Heat 1 Tbs oil & pour in the beaten Large eggs. When slightly hard, remove from pan. Heat remaining oil in skillet. Add in rice & toss about 2 min till oil & rice are well mixed. Add in soy sauce & mix thoroughly. Add in onions, Large eggs & bacon bits, breaking up Large eggs with a spatula. Mix well.
- Serves 4. (May be frzn forseveral wweeks. Thaw to room temperature. Hot in 250 degree oven for 20 min.)
