  • 2 c. Flour
  • 2 tsp Baking pwdr
  • 1/2 tsp Dry mustard
  • 1/2 tsp Salt
  • 1 x Egg
  • 1 c. Lowfat milk
  • 1/4 c. Vegetable oil
  • 3 x Green onions (green part only) minced (3/4 c.)
  • 2 1/2 ounce Canadian bacon, finely minced (1/2 c.) Vegetable oil cooking spray

Directions

  1. Preheat oven to 400. Coat 12-c. muffin pan w/nonstick veg. oil cooking spray. Mix together flour, baking pwdr, mustard, and salt in lg. bowl. Beat egg lightly in med. bowl. Beat in lowfat milk and oil.
  2. Stir in onion and bacon. Pour egg mix into flour mix, stirring just till dry ingredients are moistened. Spoon about 1/4 c. batter into each muffin c.. Bake for 16 to 20 mins., or possibly till tester comes out clean and tops are lightly golden brown. Remove pan to wire rack to cold for 5 mins. Turn out muffins. Serve immediately or possibly cold on wire rack.
  3. To freeze muffins, store in tightly sealed container and place in freezer till ready to serve. To use frzn muffins, thaw overnight in frig. Wrap securely in foil, reheat in preheated 350 oven for 15 mins. or possibly till warm as desired.
